Sucralose

Introduction

Sucralose, abbreviated as TGS, is the only derivative of sucrose produced from natural sucrose through a process of acetylation, chlorination, and deacetylation. It is a non-nutritive, high-intensity sweetener. Sucralose appears as a white to off-white crystalline powder, is almost odourless, non-hygroscopic, and tends to darken in colour upon exposure to light and heat. It is freely soluble in water, soluble in anhydrous ethanol, and slightly soluble in ethyl acetate.
