Malic Acid

Introduction

Malic acid is a natural organic acid. Due to the presence of an asymmetric carbon atom in its molecule, it has two stereoisomers. In nature, it exists in three forms, namely D-malic acid, L-malic acid, and their mixture DL-malic acid. It appears as white crystals or crystalline powder, has strong hygroscopicity, is readily soluble in water and ethanol, and possesses a distinctly pleasant sour taste.

Product Grades

Food Grade

It complies with national food safety standards, with a purity generally exceeding 99%, and strict limits imposed on heavy metal and arsenic content. It is used as an acidulant and pH regulator in beverages, confectionery, jellies, and seasonings.

Pharmaceutical Grade

With the highest purity, it is mainly used as an excipient in injections and as a raw material in drug synthesis. The production process requires recrystallization and refining to ensure high purity and safety.

Industrial Grade

With relatively lower purity (typically no less than 98%), it is mainly used in chemical fields such as cleaning agents, resin synthesis, and electroplating complexing agents.

Feed Grade

Specifically used as an additive in animal feed, with quality standards falling between those of food grade and industrial grade.‌‌

Malic Acid Used in the Food Industry

As the third most commonly used acidity regulator, malic acid is used in beverages, confectionery, jams, and dairy products, providing a mild acidity close to that of natural fruits. It also functions in color retention, preservation, emulsification stabilization, and regulation of fermentation pH.

Malic Acid Used in the Pharmaceutical Industry

● Pharmaceutical excipient: Improves the taste of tablets and syrups, and promotes drug absorption.

● Amino acid injection: When incorporated into compound amino acid injection solutions, it enhances their bioavailability.

● Salt derivatives: Potassium and sodium salts of malic acid can be used as adjunctive therapy for liver disease, hypertension, and edema, and also serve as low-sodium salt substitutes.

● Physiological function: Participates in the body's energy metabolism and exhibits certain anti-fatigue effects.

Malic Acid Used in the Cosmetic Industry

In skincare products, malic acid serves as an alpha-hydroxy acid (AHA) exfoliating ingredient that promotes cell metabolism; in toothpaste (often in the form of its zinc salt), it functions as an anti-tartar and antibacterial agent.
